choripan with chimichurri
This recipe by itself is ideal, but it can also go with salads or other meats to take advantage of the grill.
Instructions
1. Place the chorizos on the grill at 400º Fahrenheit.
2. Grill the chorizos for 20 minutes. Don’t prick them! This way you’ll get cooked chorizos, without drying them out.
3. Minutes before removing them from the fire, brown your bread on the grill until it gets slightly toasted.
4. Lastly, cut each chorizo in half, place it inside its respective bread and complete the sandwich with a good amount of Chimichurri.

• 1 or more Chorizos
• 1 piece bread for each Chorizo
• Chimichurri

MUM'S TIPS:
• Although you can use the bread of your choice, I recommend you try this recipe with a baguette. Cut it into small pieces and then cut each of those pieces long ways to make a 'bun' for each chorizo.
• If you don't mind losing a little bit of juice, instead of cooking them whole, you can open them in half when cooking them (a cutting technique called “butterfly”) or prick them during cooking so that they lose a little bit of fat and liquid.
• If you don’t have a grill, don’t worry! You can also make your choripanes in the oven by using a roasting pan.
• Use tongs to move and turn the chorizos.
