BREAD WITH CHIMI

Okay this isn't much of a recipe - more like a great idea. It makes for a delicious snack even when there is little to choose from in your pantry. Here it goes.

INGREDIENTS:

Bread (French baguette, bagels, country bread, any bread will do the trick)
Chimichurri

Instructions

1. Slide the bread to your preference. I like to slice it 1/4 to 1/2 inch thick.
2. Toast the slices (warm bread is always better).
3. Spread a healthy amount of Chimichurri on every slice of toasted bread. The oil and the herbs will permeate the warm bread and it will taste incredible.
4. You can now be creative and add anything you fancy on top of that delicious toast: roasted peppers, smoked salmon, melted cheese, prosciutto, cold cuts, fresh cherry or dried tomatoes, roasted artichokes, asparagus, olives, even some left over chicken from the roasted chicken recipe.
